Local Community Day!

Saturday we spent a fun filled day at a Community Day sponsored by a local church that benefitted the local fire station (whew! that was a mouth full).


They had a super fun ride ... Griffin must have ridden this a dozen times!


They had face painting ...

I loved this picture of him seeing his puppy face in the mirror for the first time.


They had bouncy houses ...


And they had snowcones!!

It was a terrific day spent with my sweet boy!

School Open House.

We went to Griffin's school open house yesterday afternoon.

He enjoyed seeing his teachers and visiting his new classroom.

They have a new piece of playground equipment ... and it couldn't be more perfect.

It's an airplane ... and those of you who know Griffin knows how much he LOVES airplanes!

Practice Makes Perfect.

This summer Griffin has been practicing writing his name.

His teachers have told us it's a very hard name to write. Apparently the letters G and lower case f are fairly hard to write for little ones.


Our friend Kristen made this laminated practice sheet he can trace again and again on with dry erasable markers.


We try to practice everyday ... and he's really coming along.

I can hardly believe our son is old enough to write his name!

Me & G

The other day I asked Mike to take a few pictures of Griffin and me because it's been awhile since a picture was taken of just the two of us.

I was looking to get a "great" picture of us ... can't say that happened, but we did get a couple of cute ones.


Love this picture of Griffin with his nose all scrunched up and that great big smile. I also love that you can see his foot in the background. He was laying on the kitchen island.


This is a sweet one, I think. Just look at that sweet smile on my boy's face.

I'm thinking we'll try for another "great" picture soon.

Happy Birthday Eddie!

Griffin was invited to his friend Eddie's birthday party.

His parents went all out with games, a pinata, water balloons, a wonderful food spread and lots of fun and joy all around.

The Silver Diner.

We were in town last night and looking for a place for dinner.

We decided to stop by The Silver Diner ... and let me just say ... it was one of the BEST decisions ever!

The decor is so cool and they have a real working juke box ...


Griffin enjoyed choosing songs from our table ...


I was impressed with the real Crayola crayons they give the kids.


Griffin was pleasantly surprised when we allowed him to order a chocolate milk shake to enjoy with his dinner. Honestly ... that's a first for him.


You may be asking ... well, how was the food?

Oh my gosh ... it was delicious! I had to take a picture of my plate. I ordered the BBQ Burger With Avocado. It was served with bacon, swiss cheese, a thick slice of avocado, southwest dressing and I asked them to add grilled onions. It was literally the BEST hamburger that I've ever had. It was so thick I could not even fit it in my mouth. I had to eat it with a knife and fork.

We had the BEST of waitresses as well. Her name was Janet and she far exceeded the 110% customer satisfaction they guarantee.

It was such a pleasant experience ... I would like to go back right now.

Happy Birthday Nana!

Today is Nana's Birthday ...


We wish you the happiest birthday ever and we hope you have a terrific day!!


This is one of my all time favorite pictures of Nana and Griffin together. Griffin was two when this picture was taken. We were visiting their house in Florida. This was taken in their garden. The sun was hitting just right and it made for a beautiful picture.

They Built An Airplane.

Mike was out of town last week ... when he came home he surprised Griffin with an airplane kit they could put together after dinner.


There were many pieces to put together ...


As they were putting the kit together I looked over and noticed Griffin had a milk-stache. He was so excited to put the airplane together that he forgot to wipe his mouth before starting. This is one of my favorite pictures, ever!


Does he look like a happy boy? Daddy is home AND he has a new airplane.

All is right in his world.

Boys & Their Bikes.

As you may know we live waaaaay out in the country. We have no paved roads in our community, they are gravel and even our drive-way is gravel. That makes it hard for bike riding.

We've tried giving Griffin a little bike riding time on our road, however he will pedal twice and hit a rock. It makes for alot of frustration and not a real fun time.

So, we decided to pack up the bicycle and meet friends at our local park. The boys can ride their bicycles on the basketball courts.

Fassolakia ~ Green Beans & Tomatos

Saturday night on the menu was an oven baked pork tenderloin and sweet potatos. I knew I was going to make some sort of green beans but really wasn't sure how I wanted to cook them.


I walked out to our little garden to see what was ready and there were three tomatos and a green bell pepper ready to pick ...


mmmmmmm ... I wonder ... what can I make with green beans, tomatos and green beans?

I decided to sign online and google a recipe using those ingredients and I came upon a recipe called Fassolakia. It's a greek green bean casserole with tomatos.

So I made it ...


And it was delicious! It was the perfect addition to the pork tenderloin and sweet potatos.

I cut the recipe in half because I only had one bag of frozen green beans ... oh how I wish I had had enough to make the full recipe.

Fassolakia ~ Green Bean Casserole With Tomato

Ingredients:

- 2 pounds fresh or frozen green beans
- 2 cups of tomatos, peeled and finely chopped
- 2 onions, finely chopped
- 1 cup olive oil
- 1 green pepper, thinly sliced
- 1 small bunch of parsley (I didn't use this)
- 2-3 cloves of garlic, finely chopped
- 1/4 cup of water
- salt
- fresh ground pepper

Preparation:

Wash the beans, cut off the tips and remove the stringy piece of fiber along the seam. Rinse he beans.

In a soup pot, saute the onions in a little bit of olive oil until they turn translucent. Stire in the garlic and saute a few minutes more. Add all the remaining ingredients and the water. Stir well, reduce heat and simmer covered for 45 to 50 minutes or until the beans are tender. Add more water if needed during cooking.

They are wonderfully delicious.
